A mushroom native of Southern Europe commonly found in Southern France and Spain, it is trumpet like in appearance with excellent texture reminiscent of scallops and a sweet flavour with tarragon notes. It is highly versatile whether roasted, fried or even BBQ retaining it excellent texture. It is commonly used as replacement of Ceps in many dishes due to its texture
