The White Beech/”Buna shimeji” is native to North America and Asia and is one the commonest and desired mushrooms cultivated in Asia. It possesses excellent firm texture and a mild sweet nutty flavour and is brilliant white in colouration retaining its texture and colour on cooking. Highly versatile it is suitable for many forms of cooking whilst providing a distinct visual counterpoint to any dish.
