“Donko” Shiitakes are Shiitake mushrooms which have been cultivated outside and typically grow much slower than indoor shiitakes. The flesh of the “Donko” is very firm whilst the cap surface is covered in star shaped fissures, a result of the fluctuation in temperatures and humidity. It possess a highly intensified shiitake flavour profile.
